STRATEGY ANALYSIS FOR SOLID AND LIQUID WASTE PROCESSING OF TOFU INDUSTRY IN KABUPATEN PONOROGO

Abstract

Tofu is one of the products of processed food production and mostly consumed by the public. The tofu Industry in Kabupaten Ponorogo still uses simple technology and it causes the efficiency level for water resources and raw materials usage are still low and relatively high for the waste it produces. The tofu industrial process produces solid and liquid waste. Solid waste is generated from the tofu filtering and clumping process. Meanwhile, the liquid waste is generated from the activities of washing, boiling, pressing, and forming tofu. Kabupaten Ponorogo is one of the regencies that has tofu industry of 306 business units spread across several areas located near residential areas, one of it is located in Desa Bancar, Kecamatan Bungkal, Kabupaten Ponorogo. This study aims to analyze recommendations for solid and liquid waste management in Desa Bancar using a SWOT analysis (Strength, Weakness, Opportunity and Threats) followed by determining strategic priorities with the method of AHP (Analytical Hierarchy Process). To study this case, it is necessary to carry out observations, documentation at the research location and interview the stakeholders in the waste management of Tofu Industry in Desa Bancar to wit the business owner and community leaders in Kabupaten Ponorogo. Based on SWOT analysis result and the AHP method deliver strategic priorities to create solid and liquid waste management in Tofu Industry, such as: (1) Increase the intensity of continuous counseling both informal and formal to build a sense of ownership of WWTP and environmental management, (2) Collaborate with the Environment Department and environmental consultants for assistance in the processing of liquid and solid waste, (3) Escalate the awareness of the utilization of renewable energy derived from liquid waste, (4) Budgeting funds for waste water treatment development program, (5) Collaborate with local government related to solid waste utilization training, (6) Improving the industrial management system related to industrial institutions.
